I recommend watching Kai but with these caveats:

After DBZ Kai episode five, watch DBZ episodes 11-14. These are some of the better filler episodes. We get an early preview of Vegeta and Nappa's ruthlessness, Goku falls into hell and has to find a way out and then a snake lady tries to charm the pants off of him. Literally. After that, proceed to DBZ Kai episode 6.

After DBZ Kai episode 54 you could watch the filler Garlic Jr. saga from DBZ, but it's not that great. Maybe watch it once but perhaps skip it on repeat viewings. If you do watch it, continue on with DBZ Kai episode 55 afterwards.

After DBZ Kai episode 58, drop everything you're doing and watch DBZ episode 125 aka the driving episode. This is objectively the best filler in the show. After that, proceed to DBZ Kai episode 59.

After DBZ Kai episode 98, watch DBZ episodes 195-199 aka the Otherworld Tournament. There's some great characters here and some good moments, plus we get introduced to King Kai's counterparts, as well as Grand Kai, and Pikkon. After that, proceed to watch DBZ Kai episode 99 and continue until the end of the series.

That's about all I can think of. I personally always rewatch Cooler's Revenge right after the Freeza Saga and Bojack Unbound right after the Cell Games. They line up pretty well and I've always accepted them as headcanon.
